Reporting from Bussines Diary Philippines, professor from the University of Philippines Los Banos, Dr. Artemio Salazar explained that corn can be a good staple food for diabetes patients. This is because corn has a higher amylose content than rice. Making corn will be digested more slowly by the body, so that blood sugar will be better controlled.
The good thing is, corn has protein, dietary fiber, minerals, and antioxidants that are much higher than other staple foods. However, although white rice with corn rice looks almost the same, getting used to consumption of corn rice seems a bit difficult.
For that, if you want to switch to eating corn rice (which may feel foreign to you), you should switch slowly. You may be able to mix corn rice and white rice first the first time you try it, so that it will be easier for your tongue to accept it.
